What is Aguachile?

Aguachile is typically made with raw shrimp, onions, cucumbers, limes, and of course, chile. You can also add some tomato, cilantro, and avocado as well. This dish is not to be mistaken for Ceviche. Although similar, the flavor is quite different and typically spicier.

In the Riviera Nayarit, you’ll find three distinct variations of this traditional Mexican food: Aguachile Verde (Green), Rojo (Red), and Negro (Black). But what are the differences between the three? Check it out!

The Traditional Green

Peel the shrimp, and add onions and cucumbers. Place some chopped serrano peppers, lime juice, garlic, and salt in a blender and blend for a few seconds. You’ll have the perfect sauce! Pour it over your shrimp dish and enjoy!

This is similar to the green variant, but instead of serrano chiles, you use chile de árbol to make the sauce. These bright red peppers have a slightly different taste and will make your sauce delightfully red and no less spicy.
